Ripe tomatoes, fresh basil and smokey mozzarella go together perfectly. Add pasta and a splash of olive oil & vinegar and you have a wonderful meal.
8 oz. uncooked fusilli, or other spiral pasta (whole grain also works well)
1 tablespoon balsamic vinegar or more to taste
2 teaspoons of extra virgin olive oil
1/2 teaspoon dried oregano
1 cup cherry tomatoes, halved
1/2 cup basil freshly chopped
1/2 cup part-skim mozzarella cheese, smoked, diced
salt & pepper to taste
Cook pasta according to package directions; drain & transfer into a large bowl. Add oil, vinegar & oregano; toss to coat. Fold in tomatoes, basil and mozzarella; season to taste with salt and pepper. Makes six 1 cup servings.

Thanks for stopping by and for the compliment. I am happy to have found your blog. I'll be back in my quest to keep this over the hill body in shape. I just started Body Pump about a month ago along with Step aerobics for 4 yrs. now. I'm fighting! :)
