{Bacon & Eggs} Saturday Morning Breakfast


I had to post my freakin' fabulous Saturday Morning Breakfast! Scrambled Eggs (1 egg, 3 whites) 131 calories, 3 Slices Turkey bacon 105 calories, 1 Kim's Light Plain Bagel 110 calories, 4 fiber, 5 protein, 23 carbs. These bagels are a great alternative to NY Bagels which are around 600 calories!

Amazing Weekend Bacon & Eggs Breakfast for a total of 346 Calories! Freakin' Fabulous!!

Marinated Pork Tenderloin, Spinach & Salad








Our usual Saturday night dinner in Rhode Island is Seafood or Steaks, tonight I felt like something different. I was training my client Tomoko on Friday and she was telling me about her marinated pork tenderloin. It sounded great, so I decided to try it.

I used Soy Sauce, fresh Garlic, Sesame Oil, Sesame Seeds & Fresh Ginger. I marinated it a few hours, and BBQ'd it. It was spectacular! I served it with baked potato, Fresh Sauteed Spinach with Virgin Olive Oil & Garlic and a huge Romaine Salad with Tomatoes. All Veges were from the Farmer's Market. A great clean meal, and so easy!

A perfect quiet weekend by the beach & pool ending with a great "Powermeal"

Pasta Salad ~Tomato, Basil & Smoked Mozzarella~



Ripe tomatoes, fresh basil and smokey mozzarella go together perfectly. Add pasta and a splash of olive oil & vinegar and you have a wonderful meal.


8 oz. uncooked fusilli, or other spiral pasta (whole grain also works well)
1 tablespoon balsamic vinegar or more to taste
2 teaspoons of extra virgin olive oil
1/2 teaspoon dried oregano
1 cup cherry tomatoes, halved
1/2 cup basil freshly chopped
1/2 cup part-skim mozzarella cheese, smoked, diced
salt & pepper to taste

Cook pasta according to package directions; drain & transfer into a large bowl. Add oil, vinegar & oregano; toss to coat. Fold in tomatoes, basil and mozzarella; season to taste with salt and pepper. Makes six 1 cup servings.

Perfect for your picnic at the beach!

Steamed Lobsters - Grilled Lobsters



STEAMED LOBSTERS Prep: 30 Minutes, Cook: 25 Minutes Cool: 5 Minutes

1 Tablespoon Kosher Salt
2 Lobsters (1 1/2 pounds)

Place a steaming rack in a bottom of a very large stockpot. Add Kosher salt and 3 to 4 inches of water; bring to a boil. Place lobsters in pan. Cover and steam 14 minutes. Let cool. Remove meat from tail, legs, and claws. Serve or chill and use as desired. Makes 2 servings.

SPLIT GRILLED LOBSTERS - Prep: 30 Minutes, Cook: 25 Minutes

4 Lobsters Split (1 1/2 pounds)
1 Cup melted Butter (Optional)
Kosher Salt
Freshly Ground Pepper
Chopped Fresh Chives
Fresh Lemon Wedges

Place Lobsters, shell side down, on grill gate. Brush with butter; sprinkle with kosher salt and pepper. Grill Lobsters, covered with grill lid, over medium-high heat (350-400 degrees) 10 minutes or until done, basting with butter. (Do not turn lobsters.) Sprinkle with chives before serving. Makes 4 servings.

LOBSTER LESSONS - Prepping - before boiling or steaming, put live lobsters in the freezer for about an hour. Cold temperatures sedate them, after which they can be gently placed head-first in boiling water.
